Part of the fun of eating sandwiches is making them — especially when you’re in charge of what to put in them. This week, the Food52 test kitchen was all about DIY sandwiches — both sweet and savory.

First, we made ice cream sandwiches to celebrate a couple of staff birthdays. We cut the cookies in pieces so we could have a taste of each one: chocolate chip, oatmeal raisin, and peanut butter. Not pictured here were three tubs of ice cream to go with: chocolate, vanilla, and coffee. The mocha sandwich (chocolate chip + coffee) was a crowd favorite.

Once we had fortified ourselves with ice cream and cookies, we fired up the grill.

And here are the remnants of our DIY burger station, just in time for lunch: three types of burgers, two types of buns, and condiments galore. We like options, options, and more options.
