One of my favorite comfort foods recipes I learned from my mother. South Indian style roast potatoes. Completely independent of recipe proportions,you just star with whatever quantity of fingerling potatoes you have, Boiled and peeled. Heat oil and add a teaspoon each of mustard seeds and urad dal, once the mustard pops, add the potatoes. Add paprika, turmeric, asafetida and salt, and coat the potatoes. Add a tablespoon of rice flour to make the porous ‘crunchy’. Serve up with rice and sambar or rasam. #vegan #glutenfree #momtest

Simplest potato salad. Boil peeled and cubed potatoes until they can be speared with a fork, drain, and toss with good olive oil, your favorite vinegar – I used sherry – and plenty of chopped fresh herbs. Here, dill and parsley. Take a couple thick slices of Tartine country rye bread that you made last week. Cut them into fat chunks and put them in a large cast-iron skillet. Cut the back out of a chicken and snip the keel bone to make the chicken lie flat. (Yes, it looks like the keel of the ship.) Put a thinly sliced onion in the middle of the skillet and then put the chicken on top. Sprinkle kosher salt on the chicken. Bake at 500°. After 30 minutes, lift up the chicken, pull the onions out to the side of the pan, and put any really dark pieces of bread under the chicken, along with a couple sprigs of marjoram or thyme or both. Pour a glass of wine over the bird and put it back in the oven. The larger size chickens I roast usually take about an hour and 20 minutes. Let the chicken rest; meanwhile, remove the chunks of bread to a bowl, add another glass of wine or some water to the pan, scrape it all down over medium heat for a minute or so, to make a nice sauce. Roasted garlic cauliflower with greens. I’m in a garlicky mood today. Snacking on this goodness is making my day. Try this easy #vegetarian #recipe : wash cauliflower and separate the florets. Place in casserole pan. Turn on oven to 400*F — add lots chopped garlic, douse with olive oil, a dash of sherry vinegar, splash of tamari soy sauce, grind a little sea salt & pepper on top and pop it into the oven, about 20 minutes. Pasta e fagioli. Sauté garlic, onion, carrots, and celery until tender over medium heat. Add in crushed tomatoes and their liquid, diced Canadian bacon, beans, and stock. Bring to a boil and then turn the heat down to low. I like to let the mixture simmer for about an hour or so. Salt and pepper to taste. When you’re just about ready to serve, bring the soup to a boil again and add in the pasta. Cook until the pasta is tender. Serve with freshly grated Parmesan and sprinkle with parsley. #momtest

My mom’s tang yuan (mochi ball) recipe: mix glutinous rice flour with enough warm water until it feels like Play-Doh. Tint a third of the dough with red food coloring. Roll into a long snake and pinch off cm length pieces. Roll the pieces into balls. Cook in boiling water until floating for a minute or two. Beat egg whites with a little sugar till stiff. Toast coconut and almonds. Whip cream and sugar. Add Kahlua, instant espresso, vanilla and 3/4 of the coconut & almonds. Pour into a bowl, top with remaining coconut & almonds. Freeze for few hours and enjoy!#momtest #icecream #coconut

Canned whole peeled tomatoes, sliced carrots, onions, whole cloves of garlic, olive oil, fresh basil leaves, salt, pepper, and sugar, simmered on the stove for an hour or more, and then puréed together to make the most satisfying pasta sauce. #momtest
