For a while, you put honey in everything. You made honey cake and baklava, sweetened whole batches of granola, made honey buns just for the honey’s sake. And all there’s left is a slim layer of honey crystallizing in the bottom of the jar. Now what?

Here’s what to make if you’ve only got a few tablespoons:
- Use it to sweeten a vinaigrette! Whisk or shake it up with a bit of vinegar or lemon juice, olive oil, and mustard.
- Make a compound butter for your biscuits or toast. Mash whatever leftover honey you have into a few tablespoons of butter until completely (or mostly) combined.
- Dollop it out onto a cheese plate next to something salty or strong-flavored.
- Coat roasted nuts in a thin layer of honey for a salty-sweet snack.
- Or make a glaze for chicken wings, a whole roast chicken, or a ham.
- Make—and fry!—balls of goat cheese sweetened with a bit of honey.
- Use it to add floral depth to a buttercream frosting.
- Spread a thin layer onto a grilled cheese (pre-grilling).
- Or add it to a batch of homemade nut milk.
- Toss a bit of honey and butter or oil with roasted vegetables.
- Mix it with fresh or powdered turmeric and ginger for a tea concentrate: Just add a spoonful of the mixture to a mug and top with hot water.
- Simply drizzle it over toast or biscuits—or, when no one’s watching, lick it off the spoon.
