“Why would I sandwich ice cream with bread?” you’re wondering. Cookies are the standard vehicle for ice cream to be transformed into a sandwich, and rightly so: they’re sweet, they’re chewy, they make the combination feel like a serious dessert dessert.
That doesn’t mean you should rule out bread, though—the combination is, after all, called an ice cream sandwich. Plus, it’s not all that different from strawberry shortcake, where a sweetened filling of whipped cream is dolloped between a split, not-all-that-sweet biscuit.

Smooshing rich chocolate ice cream or sorbet between pieces of salty focaccia serves to highlight the frozen filling while providing you with a satisfyingly chewy vehicle to hold it all in your hands. It’s still solidly dessert; just not the type of dessert where you question whether or not your teeth might fall out after you’re done enjoying it.
Once you’ve tried ice cream (or sorbet) on focaccia, I’ll bet you’ll be ready to branch out. Before you know it you’ll be scooping frozen confections onto little brioche buns or even onto whole wheat toast.
