What’s not to love about sweet-salty stuffed dates wrapped in a crispy bacon blanket? Devils on Horseback is one of those party snacks that’s as easy to make as it is to eat (speaking from personal experience). But community member Helenthenanny has managed to one-up the classic by introducing a spicy twist—ladies and gentlemen, meet the Devils on Hatchback.
“I use roasted Hatch Green Chiles, which are gold ’round these parts, and cream cheese to accompany the bacon,” she writes. “The mild spiciness of the pepper is a lovely complement to the saltiness of the bacon and the sweetness of the cheese.”

Cream cheese is a quintessential crowd-pleaser, but if you’re looking for something a little funkier, Helenthenanny also recommends Cambozola, a German brie-style blue cheese. Or try velvety goat cheese. Just add a touch of honey to get that same sweetness.
Also, do your best to get those Hatch chile peppers. Grown in the Hatch Valley of New Mexico, the unique terroir creates that distinct flavor profile in the chiles. If you can’t get your hands on Hatch, don’t worry. Anaheim chiles or poblanos will work just fine.
